In my own journey, I’ve found that the most healing moments aren’t always grand gestures or elaborate events. They’re the times when someone brings a dish to the table and says, "Here. I made this for you."

Recipe: Summer Pasta with Roasted Veggies & Herbed Vinaigrette
A vibrant, make-ahead dish that’s perfect for feeding a crowd.
Ingredients:
1 lb short pasta (penne, farfalle, or rotini)
1 zucchini, chopped
1 yellow squash, chopped
1 red bell pepper, sliced
1 small red onion, sliced
Olive oil, salt & pepper
1/2 cup cherry tomatoes, halved
1/2 cup crumbled feta or goat cheese
Fresh herbs (parsley, basil, or dill)
For the vinaigrette:
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 garlic clove, minced
Salt & pepper
Instructions:
Roast the squash, peppers, and onion at 425°F with olive oil, salt, and pepper until golden.
Cook pasta until al dente. Drain and let cool Top with a bit of olive oil to prevent sticking.
Whisk together vinaigrette ingredients.
In a large bowl, toss pasta with roasted veggies, tomatoes, herbs, cheese, and vinaigrette. Serve at room temperature.
